Hello:

How can I explore the coeficcients of each variable on each model, and in
the best model?

What I want to do is to evaluate if any variable has a negative or positive
impact on the presence of the species (VarImportance gives an idea but
doesn't indicate positive or negative influence).

Maybe the response.plot can help?
